Salad Lyonnaise
Poached eggs, lardons, frisée, and Dijon vinaigrette.
Parisian Gnocchi
Parmigiano Reggiano, brown butter, seared mushrooms, and thyme.
Scallops
Seared scallops, lemon pistou, and pickled fennel.
Steak Au Poivre
Butter Poached Filet, Toasted Black Pepper Cognac Sauce, Potato Dauphinoise, Green Beans with shallots and mustard.
Red Wine Poached Pear
Honey and red wine poached pear, mascarpone vanilla bean panna cotta, almond praline.
