The Menu
Grilled Bone Marrow
Grilled beef marrow filled bones topped with fennel salsa verde, pickled fennel and served with grilled sourdough.
Roasted Pear Salad
A variety of pears roasted until caramelized, tossed in a hazelnut vinaigrette with baby lettuces. Topped with gorgonzola cheese and toasted hazelnuts.
Steak Tagliata
Flat Iron steak sous vide in beef tallow and rosemary butter, topped with arugula from the garden, charred lemon vinaigrette, shaved parmesan and fried capers. Paired with Roman Gnocchi, crisp cakes made from semolina and parmesan and fresh herbs.
Almond Chocolate Torte
Almond and chocolate flourless cake served with amaretto caramel, vanilla Chantilly cream and Florentine brittle.
